In the high mountains of the Japanese Alps, lives a legendary white tiger: Byakko. A mystical being said to inhabit the western sky, ruling over the wind and the land after five hundred years of solitude. It is this spirit, adventurous, elusive, and deeply rooted in nature, that shapes every element of Byakko's identity.
Nestled within Six Senses Crans-Montana, Byakko is a high-altitude sanctuary where Japanese culinary tradition meets Alpine terroir, and where dining extends seamlessly into an immersive social experience long after the last dish has been served.
Culinary Philosophy
Byakko draws from Japanese tradition, reinvented for a discerning and contemporary audience. The menu celebrates the culinary heritage of the Japanese Alps through dishes designed for sharing, elevated by wood-fired cooking, smoking, and grilling techniques that define the kitchen's character. Signature dishes change with each season, crafted from quality ingredients sourced directly from the surrounding Alpine region.
The result is a cuisine that feels both faithful to its origins and alive to its context: precise, generous, and unapologetically itself.
The Chef
Executive Chef Yukta Ghale brings years of hands-on experience and a deep respect for Japanese culinary traditions, focusing on what matters most: excellent ingredients, careful techniques, and dishes that speak for themselves. His approach is ingredient-first, letting local Swiss Alpine produce and authentic Japanese technique find their own balance rather than imposing a concept onto either. Fish is handled delicately, rice is perfectly balanced, and every plate reflects the simplicity and elegance of authentic Japanese cuisine. Known equally for creativity and rigour, Chef Yukta's kitchen is one where discipline and curiosity coexist.
The Dining Experience
The journey begins at the entrance: the delicate scent of Japanese cedar fills the air, the sound of wind whispers softly, and the feeling of a breeze moves through the room. A shadow of Byakko guards the threshold. An old wooden door stands closed at the end of the corridor, inviting guests to step through into something else entirely.
Inside, warm materials, modernised traditional Japanese fabrics, and a careful harmony of motifs and textures create a space that is simultaneously cosy and mythological. The atmosphere shifts as the evening progresses: from contemplative and intimate at dinner, to something altogether more alive as the night takes hold. A retro and groovy musical journey, remixed by a live DJ set, gives way to the dramatic roar of Byakko signalling the celebration, with Japanese culture taking centre stage through eccentric appearances and lively performances.
Byakko is not only a restaurant. It is an experience that shifts registers with the hours.
Location
Byakko is situated at Route des Téléphériques 60, within Six Senses Crans-Montana, perched above the resort town at an altitude of 1,500 metres in the Swiss canton of Valais. Crans-Montana is one of the Alps' most storied destinations, a place where Champagne skiing, 300 days of sunshine a year, and a refined village atmosphere have drawn a discerning international crowd for over a century.
The resort sits directly on the slopes, with the Plaine Morte glacier above and sweeping views across the Rhône Valley below. Within this setting, Byakko occupies its own distinct world, tucked within the hotel yet entirely its own, a sanctuary that feels removed from the mountain day and shaped by a different kind of journey entirely.
